POPSS'mores icebox candy bars: recipe Let cool on the counter for 30 minutes, then place in the fridge to solidify for a few hours or overnight. Cut into bars. Wrap individually and store in the fridge.

POPSTricked out caramel apples Go to the source to see the inside of the apple. Use a melon baller to scoop out the seeds and core from the bottom. Fill that cavity with chocolate (or something else) and plug with a bit of scooped out apple. Then, dip in caramel and topping. Wowzer!

POPSDark chocolate cookies: recipe Preheat the oven to 325 degrees F. Lightly grease (or line with parchment) two baking sheets, three if you have them. Drop the cookie dough by the tablespoonful (about the size of a small ping pong ball) onto the prepared baking sheets. A tablespoon cookie scoop makes this task extremely simple. Leave about 2? between the dough balls, as they’ ll spread as they bake. Bake the cookies for 11 to 12 minutes, until their tops are shiny and cracked. They won’t crack until the very end, so keep a close eye on them; when they’re cracked all the way across the top surface, they’ re done. The point is, you want these baked all the way through, but just barely; additional baking makes them more crisp rather than chewy. Remove the cookies from the oven. Wait 5 minutes then transfer the cookies to a wire rack to cool.

POPSFlourless Peanut Butter Cookies: recipe I've never found a ready-made peanut butter cookie that tasted peanut-y enough. I always have to make my own to get the peanut-loving goodness. These look worth trying. Not too many ingredients, not too many cookies. Plus, I almost always have these ingredients hanging around. (except when I don't have an egg, curses!)

POPSCherry Chocolate Cupcakes: recipe If you don't have brandy, you can use another liquor like Amaretto or just boiling water to soak the cherries. I think a chocolate ganache on top would be yum. Or even just whipped cream.

POPSChocolate dipped pretzels Using the Lindt Chili bar seems a good idea. I really like using finishing salt on chocolate, but I wonder if it's really needed here since the pretzels have salt on them. Perhaps I should try it both ways and compare. There really isn't much easier than this method. Melt and dip. It isn't hard but time consuming.

POPScrab apple dessert Genius! The photo kind of looks like the tops are cut off, but that is just the line where the caramel stops.

POPSHeart shaped dipped krispies You could also used milk chocolate chips (or combination) or tinted white chocolate bark. How sweet would pink be? Size can vary as well. Go really big or very small. Little kids could help make these.

POPSCrockpot chocolate cake recipe It doesn't mention what size crock pot to use. I imagine the whole house would smell like a chocolate hug for hours and hours. Dreamy sigh.

POPS4-layer chocolate pudding dessert I've had something similar to this but it had a layer of bananas in it somewhere. Anyone recognize that? I can't remember a name for it. Oh my is it good. Someone usually makes it for family reunions and I eat way too much of it.

POPSNancy Silverton's Hot Fudge Sauce: recipe 3. Whisk in melted chocolate. Boil hot fudge for few minutes to reduce to consistency you desire. It should be quite viscous and surface should have glossy shine. Cool slightly and beat in Cognac or brandy.

POPSOreo truffles They have Oreos with red cream centers out for Christmas. I wonder if those would make the color change. Someone suggested putting a Junior Mint in the middle, but I think using mint Oreos would be better, or maybe peppermint bits?

POPSZebra Cake recipe and technique Put 3 tbsp of vanilla batter into the center of the pan and let it spread slightly on its own. Put 3 tbsp of chocolate batter in the center of the vanilla. It will push out the other batter and, as it sits for a moment, will also spread itself. Alternating spoonfuls of the two batters, repeat the technique until all the batter has been used up. Bake for 38-42 minutes, until the cake is light gold and a tester inserted into the center of the cake comes out clean. Let the cake cool in the pan for 10-15 minutes, then turn out the cake and remove the parchment paper. Reinvert on to a wire rack and let cool before slicing.

POPSCupcake bites and cupcake pops Cute way to turn cake balls into wee little cupcakes. This is a lot of extra work compared to the monotony of making regular cake balls, but look how cute they are!

POPSChocolate covered bacon I think I must try and make this at home. I'll let you know if it's good. Of course it's going to be good. It's bacon and chocolate.

POPSSaint Arnold Divine 5 Beer Any Saint Arnold's fans? I tried the new Divine 5 last night. It was yummy. I'm not a huge fan of stout, but this wasn't bitter and had a rich chocolate undertone. I'm not sure if St. Arnold is sold outside Texas, but if you can get one, try it before they run out.

POPSTell the FDA, "Don't mess with our chocolate!" This just opens the door for all the cheaper yummy chocolate to become cheaper crappy chocolate. Unless you want to pay Godiva prices for decent chocolate, take the time to tell the FDA not to change the requirements. Go to the source for info and how to help. Deadline for public comment is April 25, 2007.
