Hash brown casserole: recipe

 Combine crumbled bacon, 1/4 cup cheese, green onions, sour cream, salt, pepper, and soup in a large bowl. Add potato mixture; toss gently to combine. Spoon mixture into an 11 x 7-inch baking dish coated with cooking spray. Sprinkle with remaining 3/4 cup cheese. Cover with foil coated with cooking spray. Refrigerate 8 hours or overnight. Preheat oven to 350°. Remove casserole from refrigerator; let stand at room temperature 15 minutes. Bake casserole, covered, at 350º for 30 minutes. Uncover and bake an additional 30 minutes or until bubbly around edges and cheese begins to brown.

 I love having my daughter help in the kitchen. (I also secretly love showing her the effort and the love that goes into creating a meal for the family. It doesn't magically appear, you know). She can make a salad by herself now. I even let her use the sharp knife (at 5!). I might be crazy. She is getting her own cookbook for Christmas. Sometimes it is hard for me to let go of my presentation perfectionism and just let her do it as well as she can. I have big plans for her to make a whole meal herself. I'll let you know how that goes. Hahahaha.

  Charity begins at home means that family members are more important than anyone else, and should be the focus of a person's efforts. Source I always thought this phrase meant that charity is learned at home. Teaching my daughter to cultivate and appreciate a charitable heart might be the most important thing I do. My parents truly blessed me growing up in a giving home.

Cranberry Orange Cornmeal Cake: recipe

 4. With the mixer running, slowly incorporate the egg mixture into the butter just until combined. 5. With the mixer on low speed, add one-half of the flour mixture to the batter and quickly mix for 5 seconds. Turn off the mixer and add the rest of the flour, the ricotta and one-half of the cranberries. Mix the remaining ingredients into the batter over low speed just until combined, being careful not to overmix. 6. Gently pour the batter into the cake pan and smooth the top. Scatter the remaining cranberries over the top of the cake, and sprinkle with the remaining 2 tablespoons sugar. 7. Bake the cake until a toothpick inserted comes out clean, about 1 hour and 15 minutes. Place a loose piece of foil over the top of the cake if it starts to darken. Cool the cake on a wire rack before removing it from the pan.
